Every few years, M and I get back to our alma mater in Boston (where we met… awwww) for a football game with friends. This year, we headed back a few weeks ago for a football game / wedding / family weekend.

I had grand plans to wear something fun (yet simple, of course) to sport my school spirit and make a couple easy snacks with the boys before the game as our contribution to the tailgate. We had all day Friday to hang out while M attended to wedding responsibilities as one of the groomsmen.

Life had different plans.

One of the boys ended up in urgent care that Friday so I spent the day hanging with him and the doctors. All is well now, but you can imagine that our creative kitchen endeavors got left by the wayside.

However… ya know when you get excited about making something (especially something new) and it kind of sticks with you? That was case with the simple cranberry-lime mocktail and chocolate covered pretzel sticks I planned to make. Both are super easy, so I decided to make them with the boys this past weekend despite the debacle.

Now, I get to eat most of them and have fewer friends with whom to share them (good and bad, right?).

The game took place on a typical Boston fall weekend, so this outfit proved perfect for an afternoon on the crisp but sunny day. Our school colors are maroon and gold, so it’s a perfect color combination for fall.

The boys helped me make the pretzels. They might have stolen a few white chocolate chips before we got down to business…

Then when the chocolate was melted, things started to get very messy… quickly!

I’m not sure if you’ve ever tried to clean up hardened chocolate, but it’s no joke. It took some serious elbow grease. I was glad to have picked up some tough Viva Vantage paper towels (with a $1 off coupon, no less) at Walmart to help do the dirty work. Even with a little water to aid in the clean up, these paper towels stood up to the clean up test without a flinch, not even the slightest tear.

All those hardened chocolate pieces scraped off the counter, a job well done Viva Vantage.

And now I shall depart. Because I need to eat some of these. Just looking at the pictures is making me hungry. Ha.

Homemade Chocolate Covered Pretzels
 
Ingredients
  • 20 - 25 pretzel rods
  • 1 - 24 oz bag of white chocolate chips
  • sprinkles (optional)
Instructions
  1. Using a double boiler, melt the chips until smooth. Be sure not to overcook the chocolate or it will start to harden.
  2. Pour the melted chocolate into a flat bowl.
  3. Twirl each pretzel in the chocolate until covered to taste. Add sprinkles, if desired.
  4. Place on parchment paper and allow to harden in the fridge for 20 - 25 minutes.
  5. Enjoy!

Cranberry Lime Mocktail

Ingredients
  • 2 cups cranberry juice
  • 12 oz (1 can) lime-flavored sparkling water
  • orange slice, optional
Instructions
  1. Mix cranberry juice and lime-flavored sparking water.
  2. Add orange slice for garnish, if desired.
