Merry Christmas!

I’m certainly not at work today and hope you’re spending some time with family and friends as well. My family lives all over the country and we make an effort to all be home for Christmas each year.

That means that we spend the entire day hanging out (or maybe going to see a movie, since not much else is open).

This year, I’m voting that we whip up a batch of peppermint bark while we’re all home on Christmas Day. It’s a super simple holiday treat that’s far tastier than it’s simple ingredients might suggest. I’m sure many people have their own version of how to make this indulgence, but here’s how we do it in our family.

Ingredients
  • 12 oz semi-sweet chocolate chips
  • 12 oz white chocolate
  • 1 tsp pure mint extract
  • 10 - 12 mini candy canes, crushed
Instructions
  1. In a double boiler, melt the semi-sweet chocolate chips.
  2. When fully melted, add the mint extract and mix.
  3. Line a baking sheet with parchment paper and spread the chocolate evenly along the pan. Make it as thick or as thin as your heart desires.
  4. Place in the refrigerator and allow to harden for 10 - 15 minutes.
  5. In a double boiler, melt the white chocolate.
  6. Add the white chocolate atop the hardened semi-sweet chocolate.
  7. Sprinkle the crushed candy canes into the white chocolate (pressing down where need to incorporate with the chocolate).
  8. Allow to harden, break apart into organically shaped pieces and enjoy!
  9. We stored ours in the fridge, so it didn't melt.
